Pea - Carouby De Maussane:
a tall growing, mangetout variety with attractive purple flowers, which produces large sweetly flavoured pods of up to 11cm long. The peas themselves contain a good sweet flavour and the plant will grow to a rather tall height of 150cm. To get the sweetest flavour, peas are best cooked when picked young and cooked within 30 minutes of harvest, before the sugar has turned to starch.
